Special Rules

1.       All entries in Culinary Skills are subject to the General Rules and Regulations of the Creative Arts Division as published herein.  PLEASE READ CAREFULLY.

 2.      Each entry may be accompanied by a recipe – typed or printed on a 3” x 5” card – with the contestant’s name and phone number on the back of the card.  Recipes will become the property of the Creative Arts Division of the Permian Basin Fair and Exposition.

 3.      Baked goods and candies should be on paper plates or cardboard, wrapped in plastic wrap and labeled.

 4.      All canned goods must be exhibited in regulation canning jars (jars specifically manufactured for the purpose of home canning) and labeled.  NO PARAFFIN.

 5.      Judging:  All judging in Culinary Skills (with the exception of honey) will be judged by the following score card.  NO JAR ENHANCEMENT ALLOWED.

  Color - 30% Texture - 20%
  Texture & Consistency - 30% Flavor - 50%

6.    No cream cheese, cool whip, or anything that has to be kept cool/cold.

7.       Any uncanned Culinary items not claimed on Sunday, September 14, 2008 will be disposed of.

            *Best to bring baked goods on last day for entries.

Division 14 Preserves & Jellies

·    SPECIAL RULES:  Jelly may be exhibited in standard glasses or standard jars.  All jars must be sealed.  No paraffin seal will be accepted.  All jelly glasses must have tops.  No mayonnaise, coffee or odd jars will be accepted.  PRESERVES & JELLIES WILL BE OPENED FOR JUDGING.

·    JELLY:  is a product made from the juice of the fruit.

·    FRUIT PRESERVE:  is a product consisting of whole small fruit or pieces of larger fruits cooked in syrup until clear and somewhat translucent and stored in the thick syrup or jellied juice.

·    MARMALADE:  is a jellied fruit product which holds suspended within it all or part of the fruit pulp and the sliced peal.

·    JAMS:  are made from crushed fruits cooked with sugar until mixture is more or less homogenous and thick.

·    CONSERVES:  are a jam-like product made of two or more fruits and contain either nuts or raisins or both.
